Walnut Pound Cake Recipe – Contains Egg [Video]

Walnut pound cake is a dry version of the cake. It has walnuts, Eggs and a bit of Orange zest for a out of box flavor.

I took the liberty of bringing my son Reyansh in this video as we both were alone at home and he wanted to help!

Anyways, he simply loves cake and it becomes my job to try different flavors for him. I normally just make the dry cakes as the whipped cream is just full of sugar and nothing else.

Cake still has eggs and some protein to make a point for a kid favorite.

  • 1/4 Cup Walnuts
  • 1 Cup All Purpose Flour
  • 1/2 Tsp Baking Powder
  • 113 Gms Butter (Salted or Unsalted (Unsalted is better))
  • 3 Number Eggs (Large (2 Inch height))
  • 1/4 Tsp Salt
  • 3/4 Cup Sugar
  • 1 Tsp Vanilla Essence
  • 1 Tbsp Orange Zest

Making the cake batter

  1. Crush the Walnuts and keep them aside for later use.
  2. Take a bowl, and add All-Purpose-Flour Maida, Baking Powder and salt. Keep it aside for later use. We will refer it by bowl
  3. Keep Butter in a bowl call bowl 2 and melt it in microwave for 30 seconds.
  4. Now add Sugar in melted butter in bowl 2, mix well. Keep it aside too.
  5. Break-open the eggs in a separate bowl call it bowl 3. Beat the eggs for a minute.
  6. Now add Vanilla Essence in beaten eggs bowl 3 and mix well again.
  7. Now, mix the bowl 3 Eggs contents with bowl 2 butter bowl. We are only left with two bowls at this time. Bowl 1 Maida and the bowl 2 Egg + Butter.
  8. Add crushed Walnuts to bowl 2 and mix well.
  9. Now, grate the Orange skin zest in bowl 2. Mix again for about 1 minute.
  10. Add bowl 2 mixture Egg + Butter in All Purpose flour bowl 1. It is advisable to divide the bowl-2 pour in 2 passes. First add half and blend for 1.5 minute. Then, add remaining mixture and blend again for 1.5 minute. Total 3 minutes of blending should be good.
  11. The Cake batter is now ready. Lets move on to preparing baking pan.

Preparing baking pan

  1. We are using a loaf shaped pan. You can pretty much use any pan and probably give it any shape that you want.
  2. Grease the loaf pan internally with 1 Tbsp of Butter. This helps in creating a non-sticky layer between pan and cake.
  3. Pour the prepared batter in this greased pan.

Pre-heat and Baking

  1. Pre-heat the Oven on 350 F 180 C for 5 minutes. You can also use Microwave Oven Microwave with convection mode with same levels of heat.
  2. After 5 minutes, keep the pan inside the Oven carefully. Do not forget to wear the Oven safe gloves. It would be pretty hot at this time.
  3. Bake it on 350 F 180 C for 35 minute.

Cake bake toothpick test

  1. In normal circumstances and a standard Oven, the cake should bake nice and fluffy in 35 minutes. But, given the age and heating capacity of individual Oven and Microwave Ovens, it is possible that your Oven might bake it 5 minute earlier or later.To determine the cake’s bake readiness, we use a toothpick test.
  2. Take a toothpick preferably the wood based, insert it at the center and take out. If the tooth pick comes out clean (non sticky and no raw cake batter on it, you can safely assume that cake has baked well. If you see the raw batter on toothpick, you may need to bake again for about 5 minutes.
  3. Our cake has baked well. Take it out from the Oven.

Slicing Baked Cake

  1. Keep the Walnut Pound Cake aside for 10 minutes to cool down to room temperature.
  2. After 10 Minutes, use a non-sharp knife to scrap out the corners and take out the cake loaf from the pan.
  3. Slice the cake into marble shaped pieces and it is now ready to serve. Enjoy.
  1. Walnut Pound Cake can be refrigerated. The cake pan should be covered with either a lid or an Aluminium foil to contain moisture.
  2. The cake should be consumed within 5-6 days for best taste.
