Aamras – Mango Pulp Recipe [Video]

Mango Pulp or Aamras is a unique way of preserving the Mango. The Mango Pulp when mixed with sugar increases its shelf life and can be readily used in many other recipe preparations.

You can certainly make Mango Lassi every morning just by pouring the 2 Tbsp of Mango pulp squash within a minute. Also, you can make Mango Ice Cream using this pulp. The other applications that we have seen are using it as a top up sauce in Ice Cream Sundae or garnishing the salad.

  • 2 Number Raw Mango (Big sized (Each 5 inch in height and 3 inch in width))
  • 1/2 Cup White Sugar
  1. We are making Mango Pulp today Aamras. It can be used to make Mango ice cream, Mango Lassi etc. and can be preserved as a squash and used whenever required in any recipe.
  2. Lets start with Aamras recipe.
  3. If the Mangoes that you pick are sweet, use less amount of Sugar or use as per your taste.
  4. We have 2 big sized Mango and 1/2 Cup (Our 1 Cup = 240 ML) Sugar. You can use as many Mango as you want for making Mango Pulp.
  5. Adjust the Sugar quantity as per the Mango’s own sweetness. Some mangoes are sour and might need more Sugar.
  6. Peel Mango skin and extract the Mango Pulp.
  7. You can use any type of Mango in this recipe like Alphonso, Safeda etc. except the raw green Mango.
  8. Add Mango pulp and Sugar in a grinder jar and grind it to a smooth paste.
  9. Now, run this mango paste through a Sieve to filter out any Mango threads and left over pieces. Use a spatula or a spoon to stir the Mango paste while filtering.
  10. Mango Pulp is ready.
  1. You can refrigerate it and use for about 2-3 days.
  2. If you want to preserve it for longer time, add Citric acid (approx. 1/4 Tsp) OR Lemon juice.
  3. I would suggest to make it fresh every-time you need it. Preservation does save time but is not good for health.
  4. Use it in making Mango Lassi or Mango Ice Cream or Ice Cream Sundae or any other innovative recipe that you like.
