Raita is an amazing side dish in an indian meal. It has various forms and one of them is Bathua Raita. Bathua is a green leafy vegetable and hence has numerous health benefits.

Bathua Raita Recipe In Words

Yield: 2 small bowls of Bathua Raita

Ingredients:

  1. 250 gms Finely chopped Chenopodium (Bathua) Leaves
  2. 250gms Non-sweet Curd/Yogurt
  3. 1 Tsp Roasted Cumin Powder
  4. 1/2 Cup (Our 1 Cup = 240 ML) Water (for boiling Bathua)
  5. To taste Black Salt

Method

  1. We have separated the leaves from the stem and chopped the leaves into small pieces.
  2. For Boiling Bathua: Add 1/2 Cup (Our 1 Cup = 240 ML) Water and add Bathua in a pressure Cooker.
  3. Cover the lid of the cooker and bring it to boil on high flame. Wait for 1 whistle.
  4. Once whistle has come, switch off the stove. Keep it aside closed until it has steam in it.
  5. Once all steam has vanished, open the lid of the cooker and keep it aside and let the Bathua cool down.
  6. When Bathua cooled down completely, you can prepare Raita in 2 ways.
  7. Let us see the first way. Grind 1/2 of the boiled Bathua in grinder to make a smooth paste.
  8. Now we have puree/smooth-paste as well as boiled leafy Bathua.
  9. Beat the curd to bring it to smooth consistency. Now divide Curd in two bowls with equal quantity.
  10. Add 2 Tbsp of Boiled leaves of Bathua in one bowl full of curd and the Bathua paste in another bowl full of curd.
  11. Add Black salt and roasted cumin powder in each one of them separately. Mix well.
  12. Serve and Enjoy!!!
