Wash, Peel and dice the mango. Use a long jar (one usually provided with a hand blender).Blend and mix the mango and sugar till it forms a fine puree.

Add the ice and repeat by having a cold mango mixture there is less chance of the milk curdling.

Take a taste here to check sweetness. Keep one tea spoon of this puree aside for later use.

Now while blending, add the milk (boiled and cooled) slowly. Pour the entire mix in a glass.

Garnish by taking the 1 tea spoon of fresh cream and placing it as a flat dollop on top and adding lil bit of the mango puree set aside earlier in the centre. OR by simply taking the thick cream in a spoon and making a twirl in the glass by dipping the spoon and giving it a few twists.

In my books it is criminal to add ice cubes to your mango shake once prepared as it ruins the taste. so always crush ice with the mango itself, or refrigerate for some time.

Another variation is to add a scoop of vanilla/mango ice cream and less sugar while preparing the mango puree. Ice cream to be added after you have already blended ice. the taste is different but good..
